MERMAID is a hybrid-venue on the Copenhagen waterfront — Langelinie Allé 8, right on the harbour edge of Østerbro. It's the home of Spitze Agency, and it's built around a simple idea: to explore what hospitality can evolve into when the usual formats are set aside.

The room isn't defined by a single function. It's an event space, a cocktail lab, a bottle shop with a carefully curated selection, and the agency's own creative headquarters — all under one roof, and constantly in motion. Private dining, wine and spirits tastings, product launches, and bespoke experiences all happen here, each one shaped by the same conviction: that great hospitality doesn't happen by accident. It's built through detail, deliberate choices, and consistency — from the way a drink is composed to the way a guest is welcomed and the way the room shifts throughout the night.

At the heart of it all is the cocktail lab, where new ideas take shape. The lab isn't hidden behind closed doors — guests see the process, the thinking, the craft. Every second Friday, MERMAID opens its doors to the public: a lighter, more open expression of the same philosophy, with cocktails, wine, coffee, small plates, and a DJ soundtrack down by the water.
